PGI Mortara goose salami
Operators wishing to produce, package and market the PGI Mortara goose salami must read the Production Specification and the Control Plan to evaluate all requirements adjustment.
Breeders
Goose breeders must present the form "Mod SM/DO" and the following documents:
- Sanitary authorization or the document certifying the strat of activity SCIA or similar document
- Copy of the Registration Certificateto the Chamber of Commerce
Slaughterers
Slaughterers of gooses, Suppliers of raw material as goose meat, Transformers and Packagers must present the form "Mod. SM/DO" and:
- Copy of Sanitary authorization or the document certifying the start of activity SCIA or similar document
- Copy of the Registration Certificateto the Chamber of Commerce
- Structures planimetry indicating the sites where this GPI product is worked/stored/packaged
- Process layout with indication of the lines of GPI production (in case of a space division)
- Packaging material (if available)
- Structures process form indicating the details of sites where this GPI product is worked/stored/packaged
Pigs breeders
Production of GPI Mortara goose salemi allows parts of pig meat coming from pigs bredonly according to Production Specifications of PDO "Parma" and PDO "San Daniele" Ham. CCPB controls this compliance on a documental basis through the documentation of the controls carried out by the PDO authorized Control Bodies with which an agreement has been formalized, attached to the CCPB control plan. This cooperation aims to supply the compliance documentry evidences of the farmings as well as the slaughtered pigs or their section into the supply chain.
Pigs Slaughterers
Pigs slaughters and the pig raw material suppliers (selectors) must present the form “Mod. SM/DO” and:
- Documentation stating their membership to PDO "Parma Ham" and PDO "San Daniele Ham" circuit
The slaughterers of pigs will only be subjected to documentary control according to the information transmitted by the authorized control body for the PDO Parma Ham and PDO San Daniele ham and the existing agreements between the same and CCPB srl.
PGI Mortara goose salami documentation
All applicants for the PGI Mortara goose salami certification must also send the contract (Form Mod. CO DO) for acceptance of the regulation for certification (Form Mod. RE/DO).
All the controls, operators' obligations, the classification and management of the non-compliances is defined in the Control Scheme (Annex 2 of the Control Plan). Costs for Control and certification activity that operators must pay as well as the terms of payment are inidcated in the Price List (Annex 1 of the Control Plan).
